Ricotta is a traditional fresh cheese produced from whey left in the making of mozzarella (Ricotta translates to “re-cooked”). It has a fine, smooth texture with a delicate sweet flavour. Because of the use of whey produced during the cheese making process it has a low fat content yet maintains its creaminess. Perfect for sweet and savoury dishes, and kids love it!
RECIPE: WHIPPED RICOTTA TOAST
- 4 slices sourdough or country loaf
- 1 cup ricotta
- 1/4 cup heavy cream or mascarpone cheese
- 1 tbsp extra virgin olive oil
- pinch of salt
Grill or toast your bread on both sides
Using a stand mixer or a whisk (be ready for a workout) whip together the ricotta, heavy cream/mascarpone and olive oil until well incorporated. Make sure the mixture is smooth but can hold a shape.
- Add filling to a piping bag and pipe the ricotta cream on the pieces of toast.
- Top with olive oil and flaky salt.
So good, we want to eat it for breakfast, lunch and dinner!
This mighty ricotta comes in a mini strainer so that the whey is easily drained off. This is terrific ricotta that's absolutely delicious used in so many ways.
