Locally Produced Salted Duck Eggs from Balut Island, Manila

These duck eggs are covered in a mixture of sea salt and fine clay taken from ant hills ("nuno sa punso" in Tagalog) then cured for 18 days before boiling. They are traditionally dyed red with food coloring but the last step was omitted to make a more natural product. 

Because these salted duck eggs use less salt than usual and are free of preservatives, they are best kept in the refrigerator for 2 weeks after delivery.
